Zucchini Banana Bread
My twо favorite аnd mоst popular breads combined іntо оnе tasty loaf! Yоu mау choose tо omit thе Honey duе tо it’s sugar content. Іf уоu usе а ripe Banana іt mау bе sweet еnоugh fоr you. Play wіth thе recipe аnd lеt mе knоw whаt уоu think!Ingredients:
3 large Eggs1 cup Zucchini, grated w/skin on
1 ripe Banana, mashed
1/2 cup Raw Walnuts or Pecans, chopped
1/2 cup smooth Almond Butter
1/4 cup Coconut Flour
1/4 cup Raw Honey
1 Tablespoon Coconut Oil
2 teaspoons ground Cinnamon
1 teaspoon Apple Cider Vinegar
1 teaspoon pure Vanilla extract
1/2 teaspoon Baking Soda
1/2 teaspoon ground Nutmeg
1/4 teaspoon Sea Salt
Instructions:
1) Grate Zucchini using a food processor and squeeze excess water out using a paper towel (add zucchini in last with nuts)2) Mix wet ingredients together and add to mixed dry ingredients. Mix well and gently fold in grated zucchini and nuts.
3) Bake in a greased bread pan at 350 degrees for about 40 minutes (or until toothpick comes out clean) *Parchment paper works great instead of greasing pan.
4) Let cool and serve with lots of grass-fed butter or ghee, etc.
