I usе thіs recipe fоr banana bread оr muffins. І аddеd sоmе vanilla extract tо thе recipe, аs well аs streusel оn thе top.

These muffins аrе perfect fоr а grab аnd gо breakfast оr аs а snack whеn thе kids gеt hоmе frоm school.
1 tsp. baking soda
1/4 tsp. salt
1/2 cup of butter
3/4 cup of brown sugar
2 eggs, beaten
2 1/3 cup of mashed bananas (about 5 bananas)
1 tsp. cinnamon
1 tsp. vanilla
Strussel Topping
1/4 cup of cold butter,
1/2 cup of all-purpose flour
1/2 cup of oats
1/4 cup of brown sugar
1/2 tsp. cinnamon
2. In a large bowl combine flour, salt, and baking soda. In another bowl cream the butter and sugar. Stir in eggs and mix well. Add mashed bananas, cinnamon, and vanilla and stir until mixed well.
3. Mix banana mixture into flour mixture; stir just to moisten. Pour batter into linen muffin pans. Fill each muffin cup 2/3 the way full.
4. Add the strussel ingredients in a bowl and mix until combined well. Sprinkle 1 tsp. of strussel topping on top of each muffin. Bake for 20 minutes or until golden brown and the top of the muffin springs back when touched.

Ingredients:
2 cups of all-purpose flour1 tsp. baking soda
1/4 tsp. salt
1/2 cup of butter
3/4 cup of brown sugar
