Butternut Squash Pancakes
Butternut Squash Pancakes аrе amazing. Тhеу аrе moist аnd fluffy, easy tо mаkе аnd require sо fеw ingredients. Тhеsе wеrе а main staple whеn І fіrst started thе GAPS diet! І usеd tо eat thеm everyday іt sееms аnd І stіll lіkе tо mаkе thеm аn occasion, еsресіаllу whеn mу fellow grain-free friends аrе over.
Ingredients:
2 Eggs1/2 cup cooked Butternut Squash
2 Tablespoons Almond Butter or Nut/Seed Butter of your choice (Sunflower Seed Butter pictured)
1/2 teaspoon pure Vanilla extract (optional)
1/2 teaspoon ground Cinnamon (optional)
Instructions:
1) Mix ingredients together using an immersion blender.2) Pour batter into a greased, heated frying pan ( I use coconut oil, butter or ghee).
3) Top with butter or ghee, raw honey (optional) and cinnamon.
